Easy Muffin Pizzas

Brown ground beef

I added onions, peppers, salt and pepper, I toasted the english muffins in the toaster first then put on cookie sheet

Add a jar of pasta sauce (I used one I canned) of course, I have to use them

Simmer 20-30 minutes

Load meat and cheese on muffin halfs and bake 20-25 minutes

I made a salad to go with the little pizzas
INGREDIENTS:  1 pound ground beef, English muffins, shredded mozzarella cheese, black olive, jar of pasta sauce, salad fixins.

Italian Sausage, Onions & Peppers, and Fettucine

Fry the sausage to brown on all sides

Then put sausauge in crockpot, no need to add liquid the sausage will make its own while cooking.

Add sliced peppers and onions, cook on low for 5-6 hours, stirring occasionally

Cook fettucini to 'al dente', put sausage over pasta and toss until all is completely mixed

Make a salad and serve with red wine.
Yummy!

 
INGREDIENTS: Italian sausage; 3 green peppers, sliced; one medium onion, sliced; fettucini; salad greens, red onions, other salad ingredients that you like; red wine (optional).

Chicken Parmesan, Vegetables with Pasta






INGREDIENTS:  Chicken breasts, jar of pasta sauce, provolone cheese, olive oil, tomatoes, zucchini, bell peppers, green beans, onions, garlic. Salt and pepper.

DIRECTIONS:  Put chicken in baking dish, pour sauce over and bake for 1 hour at 350 degrees, remove and put cheese over chicken, bake another 10 minutes. Boil water for pasta (I used bow ties) boil until al dente. Drain and rinse. Chop vegetables, saute veggies in olive oil, when done, add pasta and saute for several minutes until hot. Serve.

Lemon Chiffon Cupcakes

White or Lemon Cake Mix, Lemon (yes I see mine is a lime, oops)

Lemon Pudding w/Whipped Cream For Icing

Viola, Lemon Chiffon Cupcakes
Keep Refrigerated
INGREDIENTS: White cake mix, eggs, oil, water, vanilla, powdered sugar, lemon pudding, milk. 2 cups whipping cream.

DIRECTIONS:  Make cake mix as directed. whip cream until stiff, whip pudding then fold in 1/2 of the whip cream. Frost cupcakes  pudding topping (it will be thick), then top with the rest of the whip cream. Keep refrigerated and enjoy.


Easy Night Bacon Cheese Burgers

Buns and Bacon

Cook bacon until crisp

Season meat and grill, add cheese when burger is almost done

Serve with potatoe salad or green salad

Roasted Pork Loin, Mashed Potatoes, Candied Carrots, Salad, Bundt Cake

Slow Roast Pork Loin in Crock Pot

Steam Carrots

Butter and Brown Sugar in Carrots, and Boil Potatoes

INGREDIENTS:  Pork loin, cracked pepper, brown gravy packet. 6-8 potatoes, 1/2 cup sour cream, 1/2 cube butter. Carrots, 1/2 cube butter, 1/4 cup brown sugar, salad greens, avocado, red onion, cucumber, blue cheese crumbles, oil & vinegar (I use balsamic).

DIRECTIONS:  Roast pork in crock pot 4-5 hours with cracked pepper rubbed in to loin and 1/4 cup water. After 5 hours, add 1-1/2 cups water, gravy packet, and 1/4 cup cracked pepper. Cook for another 2 hours on low.  Peel and cut potatoes get ready to boil, then mash adding sour cream and butter. Steam carrots for 15 minutes or until just tender (do not overcook), then drain, add butter and brown sugar, saute for 10 minutes stirring often. Put salad together, dress it. Serve.

Steak, Black Rice, Garlic, Peppers, Bread & Salad


I grilled two Top Sirloins, Garlic with olive oil in tinfoil, Anaheim Chilies stuffed with Jalapeno String Cheese, Bread in Foil.
  Baby Greens, Avocado, Red Onion, Blue Cheese Crumbles, Carmelized Pecans                                                                        

Finished Steak and Garlic in Foil

Black and Thai Jasmine Rice mixed
INGREDIENTS:   Steak, Rice, Salad Greens, Avocado, Red Onions, Blue Cheese Crumbles, Olive Oil & Balsamic Vinegar Dressing, Garlic, Anaheim Peppers, String Cheese (choice of kinds), Foil, Bread

DIRECTIONS:  Season Steak, Cut top of Garlic off, drizzle Olive Oil, and wrap in foil. Cut off and core Peppers, stuff with 1/2 stick of String Cheese, wrap in Foil. Put Salad together, start Rice. Grill Steak. Towards end of grilling Steak, put Garlic and Peppers on top level of grill, cook ten minutes, put Bread on top shelf for 3-5 minutes.

Vegetable Lasagna

Japanese eggplant

Bread crumbs, egg/milk, parmesan cheese
Zucchini, yellow squash, bell peppers, tomatoes, and a jalapeno slice all

Layer like lasagna and bake

 
 INGREDIENTS:   No bake lasagna noodles, 1 jar of sauce (any kind you like, I use my own canned sauces) 2 or 3 Eggplant, 2 Zucchini, 2 Yellow Squash, 2 tomatoes, bread crumbs, 1 egg, 1/4 cup milk, 1/2 cup Parmesan cheese, and 1 cup mozzarella, fresh basil leaves.


DIRECTIONS:  Slice all veggies 1/2 inch thick, dip eggplant in egg/milk mixture, fry until golden brown. Put 1/2 cup sauce on bottom of baking dish, layer noodles, veggies, Parmesan, basil, and mozzarella cheese, repeat, ending up with cheese and basil on top. Bake @ 350 degrees for 40 minutes. Serve with salad, and bread.

Chicken Shish Kabobs, Rice, Veggies, and Cake

Spice Cake, Butter cream frosting with chopped walnuts

Fresh veggies cut and sauteed

Steamed Rice with 1/2 coconut milk water, and scallions

Caprice Salad, (Sue style) sliced tomatoes, fresh mozzarella cheese, fresh basil and balsamic vinegar, kosher salt & fresh ground pepper

Grilled Chicken Shiskabobs, Sauteed Veggies, and Coconut Rice

INGREDIENTS:   Shish kabobs, 1 cup rice, 1 cup coconut milk,  1 cup water. Assorted veggies ( zucchini, yellow squash, onions, garlic, peppers (per taste), tsp. olive oil for saute. Fresh mozzarella, fresh basil, sliced tomatoes, 1/4 cup balsamic vinegar. Box cake mix, eggs oil and water per directions, box powdered sugar, butter, vanilla, milk. (walnuts and nutmeg, optional). Adds more spice.

DIRECTIONS: I bought the shish kabobs already made, grilled them for about 10 minutes. Steamed rice with 1/2 water and 1/2 coconut milk, and after steaming added scallions. Cut up and sauteed veggies for 5 minutes. The Caprice Salad was also simple, slice tomatoes, onions, and fresh mozzarella cheese, stack, add basil, kosher salt, fresh ground pepper, and of course balsamic vinegar to finish it off. The Spice cake for dessert was from a box, and I added chopped walnuts to the butter cream frosting, and a little nutmeg.
